Transferencia de riesgos en la cadena de valor de la manzana de exportación

Abstract

This research describes, in the context of food globalization, risk transfer produced from a global stage to a local one, from the economic interaction between a packing exporter and producer of apples located inside a commune in the Region of Maule. The study is a qualitative approach, and applies no-participant observation and 18 indepth interviews with managers, middle managers and temporary workers of both agribusinesses. The results of this research reveal the mechanisms of risk transfer between companies which strengthens producers as the weakest node in the chain and temporary workers as the most vulnerable actors.
